The Easiest Pulled Pork

This Instant Pot recipe isn't really "instant" but it beats 8-9 hours in the crock pot!




Ingredients:

  • 4-5 lb pork loin (not pork tenderloin)

  • Montreal Seasoning (or any seasoning blend you like)

  • 2 cups broth of choice or water

  • 1/2 onion, sliced

  • BBQ Sauce of choice

  • Olive oil

  • Burger buns


Directions:

  1. Cut the pork loin into 4-5 medium chunks, season all sides with Montreal seasoning. I use the one for chicken. It has salt, pepper, onion, garlic, and more in one bottle!

  2. Turn the instant pot to saute and add a small drizzle of olive oil. When the screen says "hot" add the pork pieces 2 at a time to sear the meat on all sides. About 3-4 minutes per side. Remove and repeat the process until all the meat has been seared.

  3. Add 2 cups of broth to the hot Instant Pot and deglaze the bottom of the pan. Add the pork back, nestling it into the broth.

  4. Secure the lid and vent setting. Cook for 65 minutes and allow it to naturally release.

  5. Remove the meat, shred, and return back to the broth until ready to serve.

  6. When you are ready to serve, drain the broth and add the BBQ sauce to the meat. The amount will vary depending on your your sauce preference. I used one bottle of BBQ sauce.

  7. Serve as is, on toasted buns, and/or with this Coleslaw recipe.
