So quick and easy, I made this one night with just stuff I had one hand. I may have bought goat cheese in bulk during a moment of weakness (whoops!).
Ingredients:
4-5 Chicken breasts, cut in half
approx. 1/2 cup jarred pesto
5 oz goat cheese
Grape/cherry tomatoes
Olive oil and butter
Directions:
Heat about 1 tablespoon oil and butter in a sauté' pan. Add the chicken pieces, seasoning with salt and pepper. Cook about 6 minutes on one side, flip and add the tomatoes to the pan.
Cook the chicken and tomatoes for another 5-6 minutes on the second side.
Add a dollop of pesto to each piece of chicken and sprinkle the goat cheese over the top. Turn the heat down and cover for a few minutes, until the pesto has warmed through.
Serve with salad, potatoes, or rice.
