Quinoa salad

This salad is a perfect side dish to any meal or just by itself for a snack or lunch!





Ingredients:

  • 1 cup cooked and cooked quinoa

  • 1/2 English cucumber, diced

  • 1/2-1 container small tomatoes, cut in half

  • optional: crumbled feta cheese

  • 1/2 cup olive oil

  • 1/4 cup red wine vinegar

  • 2 garlic cloves, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon dried oregano

  • pepper to taste


Directions:

  1. In a large bowl add the olive oil, vinegar, seasonings, and garlic. Which until combined.

  2. Add the cooked and cooked quinoa and veggies to the dressing. Stirring to fully combine. Add cheese if desired.

  3. Cover and refrigerate for several hours, best served cold!

You can add any veggies you have on hand.
