Ingredients:
Approx. 5-6 cups cups marinara or meat sauce (store bought or click here for homemade meat sauce)
1 box of regular lasagna noodles, NOT cooked
15 oz ricotta cheese
3-4 cups mozzarella or "Italian blend" cheese
1 egg
2 teaspoons Italian seasoning
Salt and pepper to taste
Directions:
Spray a 9x13 casserole dish with nonstick spray. In a separate bowl mix the egg, ricotta, Italian seasoning, and salt/pepper to taste.
In the casserole dish, add about 1/4-1/2 cup sauce to the bottom of the pan. This helps the bottom layer of noodles cook. Layer 3-4 lasagna noodles over the sauce. Sometimes you have to break the noodles to make them fit.
Add about 1 cup marinara or meat sauce over the noodles. Spread about 3 dollops of the ricotta mixture over the sauce, sprinkle with about 1/4 cup shredded cheese. Add 3-4 more lasagna noodles. Ensure that the noodles are covered with the sauce and cheese mixture, this cooks the uncooked noodles so don't skimp!
Repeat this process for a total of 3 times, ending with sauce and cheese.
Cover and bake at 375 for 50-60 minutes. Use a knife to check that noodles are soft, bake an additional 5-10 minutes uncovered.
Lasagna is always better if it gets a chance to rest for about 30 minutes before serving.
