This family recipe is for a pasta salad. I love the flavor so much I figured out how to eat it more often, without the pasta.
Ingredients for sauce:
1/3 cup peanut butter
1/4 cup seasoned rice vinegar
3 tablespoons soy sauce (low sodium)
2 tablespoons white sugar
1 teaspoon ground ginger
2 teaspoons sesame oil
1 garlic clove, minced
1 teaspoon sriracha
Ingredients for wraps:
Tortilla of choice
Cooked and chopped chicken, approx. 2 cups
Shredded cabbage mix, approx. 1-1/2 cups
Chopped cilantro (optional)
Directions:
Make the sauce in a large bowl, whisking all the ingredients until smooth and combined. Add the chicken and cabbage mix and toss until everything is coated well. Let refrigerate for about an hour.
Add desired amount to a tortilla, wrap and enjoy!
