Thai Peanut Salad

This is the same sauce as the Thai Peanut Wraps, but made as a pasta salad this time!





Ingredients for sauce:

  • 1/3 cup peanut butter

  • 1/4 cup seasoned rice vinegar

  • 3 tablespoons soy sauce (low sodium)

  • 2 tablespoons white sugar

  • 1 teaspoon ground ginger

  • 2 teaspoons sesame oil

  • 1 garlic clove, minced

  • 1 teaspoon sriracha

Ingredients for pasta salad:

  • 1 box cooked linguine noodles

  • 1/2 bunch cilantro, chopped

  • 1 cup peanuts, chopped

  • 1/2 red cabbage, thinly sliced

  • 1 cup shredded carrots

Directions:

  1. In a large bowl, mix all the ingredients for the sauce. Set aside.

  2. When the noodles are cooked and cooled, add them to the sauce and start mixing everything together.

  3. Add the rest of the ingredients and mix well.

  4. Refrigerate for a few hours before serving!
