Simple Blueberry Muffins

Fluffy, slightly sweet, and so darn easy.



Ingredients:

  • 2 1/2 cups all purpose flour

  • 1/2 cup white sugar

  • 1/4 teaspoon salt

  • 2 1/2 teaspoons baking powder

  • 2 eggs

  • 1/2 cup oil (coconut, vegetable, canola)

  • 6 tablespoons melted butter

  • 1/2 cup Greek yogurt

  • 2 teaspoons vanilla

  • 1/4 cup milk

  • 3/4-1 cup frozen or fresh blueberries

Directions:

Preheat oven to 350 degrees

  1. Mix the flour, sugar, salt, and baking powder in a bowl. In another bowl add the eggs, oil, butter, yogurt, milk, and vanilla. Whisk until well blended.

  2. In a small bowl, add the blueberries and a few tablespoons of the dry mix. This keeps the berries from sinking. Coat them well with the dry ingredients.

  3. Incorporate the wet and dry ingredients, folding until almost mixed. Add the berries and dry mixture to the bowl and mix until it comes together. It will be thick, don't over mix.

  4. Grease a muffin tin and divide the batter evenly. Bake 20-25 minutes until toothpick comes out clean. Let them cool for 5 minutes before removing from the pan.
