I've been making energy bites for years and always struggle with the chocolate chips being hard as a rock! This mini candies are perfect and my kids love them...win win!
Ingredients:
2 1/2 cups quick oats
1 cup peanut butter
1/2 cup honey or agave
1/2-3/4 cup mini M&M's
Directions:
In a large bowl, combine all the ingredients. stir until well combined.
Put in the refrigerator for 20-30 minutes.
Using a cookie scoop, roll balls and keep in an airtight container.
Keep in the refrigerator, they stay soft even when cold!
