Pumpkin Spice Cupcakes with Cream Cheese Frosting

The perfect holiday treat!





Ingredients for cupcakes:

  • 1 1/4 cup flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon pumpkin pie spice

  • 1 stick of butter, melted

  • 2 eggs

  • 1/2 cup brown sugar

  • 1/2 cup canned pumpkin

  • 1 teaspoon vanilla

Directions:

  1. Combine the dry ingredients in one bowl. In a separate bowl combine the butter, eggs, sugar, sour cream, and vanilla.

  2. Add the dry ingredients to the wet, stir to combine but don't over do it.

  3. Line the muffin tin with cupcake liners, divide the batter evenly.

  4. Bake at 350 degrees for 18-20 minutes.


Ingredients for frosting:

  • 1/2 cup butter, softened

  • 8 oz package of cream cheese, softened

  • 4 cups powdered sugar

  • 2 teaspoons vanilla

Directions:

  1. Beat the butter and cream cheese until well combined. Add the powdered sugar, vanilla, and cinnamon. Mix until smooth.

  2. Use a knife to spread the frosting or a piping bag if you fancy. : )
