My kids don't love muffins with fruit in them, so pumpkin muffins are one of my go-to's for them! Another perk, you only need one bowl!
Ingredients:
2 eggs
1/2 cup sugar
1 cup canned pumpkin
3/4 cup melted butter
1 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
Directions:
Preheat oven to 425 degrees, prepare a muffin in with nonstick spray.
In a large bowl, combine the eggs, pumpkin, sugar, melted butter, and vanilla. Whisk until well combined. Add the dry ingredients to the bowl and fold until the batter comes together. Scoop equal amounts into the muffin cups.
Bake at 425 degrees for 5 minutes. Reduce the temperature to 350 degrees and bake for another 15-18 minutes. Let cook for 5 minutes before removing from the muffin tin.
