Keep it classic or add a subtle hint of pumpkin spice to these easy overnight rolls!
Ingredients for dough:
1/4 cup warm water
1 cup warm milk
2 packages of dry active yeast
1 egg, 2 egg yolks
6 tablespoons melted and cooled butter
4-5 cups flour
1/2 teaspoon salt
1/4 cup sugar
1/4 cup brown sugar
Ingredients for classic filling:
1/3 cup softened butter
1 cup brown sugar
3 tablespoons cinnamon
Ingredients for pumpkin spice filling:
1/2 cup canned pumpkin
1/3 cup softened butter
1 cup brown sugar
1 1/2 tablespoon pumpkin pie spice
1 1/2 tablespoon cinnamon
Ingredients for frosting:
2.5 ounces cream cheese, softened
6 tablespoons butter, softened
1/2 teaspoon vanilla
1 1/2 cup powdered sugar
Directions:
In the bowl of a stand mixer add the milk and water (warmed to 105-115 degrees). Sprinkle the yeast over the water and milk and allow it to dissolve and activate, about 5 minutes.
Add the cooled butter, egg, egg yolks, sugars, and salt. Turn on the mixer and allow it to start incorporating.
Add the flour, start with 4 cups of flour and continue adding until the dough becomes tacky but not sticky. When you touch it, it shouldn't stick to your fingers.
Move the dough into a greased bowl, cover with plastic wrap and a towel. Let the dough rise for about 2 hours, until it has doubled in size.
Punch the dough down and turn out onto a flour surface. Roll into a large rectangle.

Once you have the filling of choice on the dough, begin to roll the dough tightly into a log. Cut the cinnamon rolls with a sharp knife, you should get 12 evenly cut rolls.
Place the rolls in a greased 9x13 pan and cover with plastic wrap. Leave in the fridge over night for the second rise.
In the morning, bake the rolls at 350 degrees for 20-25 minutes. Allow them to cool about 10 minutes before adding frosting.
Directions for filling:
Spread the softened butter over the entire surface of the dough, using a spatula or your hands.
Combine the brown sugar and cinnamon in a bowl, spread over the entire surface of the dough. OR
Combine the brown sugar, pumpkin, cinnamon, and pumpkin pie space in a bowl. Spread over the entire surface of dough.
Directions for frosting:
Combine all the ingredients in a bowl and use an electric hand mixer to combine everything into a smooth frosting. OPTIONAL: Add 1/2-1 teaspoon pumpkin pie spice
