This is the perfect recipe for a cold day, add any vegetables you have on hand!
Ingredients:
2 medium carrots, finely chopped
1/2 an onion, finely chopped
1 teaspoon garlic
4 cups vegetable broth
1 can diced tomatoes, I used petite diced
1 cup chopped spinach (approximate)
1/2-3/4 cup dry orzo pasta
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil and butter for sautéing
Additional soup ingredient ideas:
Chopped zucchini
Chopped yellow squash
Kidney beans
White beans
Directions:
In a large soup pot heat about 1 tablespoon of olive oil and a tablespoon of butter. Add the carrots and onions and cook for about 5-10 minutes, stirring often.
Add the garlic, let it cook for a minute then add the can of diced tomato.
Add the vegetable broth, Italian seasoning, and salt and pepper. Let the soup come to a low boil.
Once the soup is boiling, add the orzo pasta and chopped spinach. Allow it to boil until the pasta is cooked, about 9-10 minutes and then simmer for another 10-15 minutes.
Serve with garlic bread and a sprinkle of parmesan cheese
