Orzo Soup with Vegetables

This is the perfect recipe for a cold day, add any vegetables you have on hand!




Ingredients:

  • 2 medium carrots, finely chopped

  • 1/2 an onion, finely chopped

  • 1 teaspoon garlic

  • 4 cups vegetable broth

  • 1 can diced tomatoes, I used petite diced

  • 1 cup chopped spinach (approximate)

  • 1/2-3/4 cup dry orzo pasta

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste

  • Olive oil and butter for sautéing


Additional soup ingredient ideas:

  • Chopped zucchini

  • Chopped yellow squash

  • Kidney beans

  • White beans



Directions:

  1. In a large soup pot heat about 1 tablespoon of olive oil and a tablespoon of butter. Add the carrots and onions and cook for about 5-10 minutes, stirring often.

  2. Add the garlic, let it cook for a minute then add the can of diced tomato.

  3. Add the vegetable broth, Italian seasoning, and salt and pepper. Let the soup come to a low boil.

  4. Once the soup is boiling, add the orzo pasta and chopped spinach. Allow it to boil until the pasta is cooked, about 9-10 minutes and then simmer for another 10-15 minutes.

  5. Serve with garlic bread and a sprinkle of parmesan cheese
