Instant Pot Cilantro Lime Rice

This side dish comes together in about 20 minutes. Easy, delicious, and perfect for taco night!

Ingredients:

  • 1 cup jasmine or long-grain white rice

  • 1 cup chicken broth or water

  • 1/2 cup chopped cilantro

  • 1 teaspoon cumin

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • juice from 1/2 lime

  • 4 oz canned diced green chiles

  • Olive oil

  • Salt/pepper


Directions:

Set the Instant Pot to saute and add about 2 tablespoons of oil. Add the rice and saute for about 5 minutes, stirring often so it doesn't burn. Add cumin, garlic powder, onion powder, and salt and pepper to taste. Turn off the Instant Pot, add chicken broth and green chiles. Put the lid on, make sure the vent is closed and set the IP for 4 minutes. When the time is up, let it sit 5-10 minutes for a natural release.


Fluff the rice and add the cilantro and lime juice, stir to combine. Serve with tacos, enchiladas, quesadillas, or use as the base of a burrito bowl!
