Instant Pot Alfredo with Chicken and Roasted Broccoli

I love making pasta in the Instant Pot because it soaks up all the brothy goodness.





Ingredients:

  • 1 box short pasta of choice

  • 4 cups chicken broth

  • 2 tablespoons butter

  • 4-6 ounces of cream cheese, softened

  • 2-3 teaspoons "Cajun" style seasoning, I use Perfect Pinch brand

  • 1/4-1/2 cup milk

  • 1 cup finely grated parmesan cheese

  • 1/2 teaspoon salt

  • pepper to taste

  • Approx. 3 cups chicken, cooked and chopped

  • 2 heads of broccoli, chopped


Directions:

  1. Preheat the oven to 425 degrees

  2. Put the chopped broccoli on a sheet pan, drizzle with olive oil and a small amount of salt and pepper. This will get added to your pasta dish, which is also salted.

  3. Roast for 15-20 minutes

  4. *If you don't have chicken that is cooked (I use rotisserie), use the sauté function on the Instant Pot to cook the chicken. Then remove

  5. Add the uncooked pasta, the chicken broth, and butter to the Instant Pot. Push the noodles down so they are covered with liquid. Cook on high pressure for 4 minutes, then immediately release the pressure.

  6. Add the milk starting with 1/4 cup, cream cheese, parmesan cheese, and seasonings. Stir continuously until everything is melted and combined. Add the chicken and keep stirring. It will look watery at first but if you keep stirring it will come together. Letting it rest on the warm setting for a few minutes will also thicken it up.

  7. You can add the broccoli here as well, or leave it to the side and add portions to each bowl.
