Comfort food to the max! Make your own crust or use a store bought, both make a delicious pot pie!
This recipes makes enough filling for one really big pie or two regular size. I usually freeze half of the filling for a future use.
Ingredients:
1/2 onion, chopped
2 medium carrots, chopped
2 stalks of celery, chopped
1/4 cup flour
2 tablespoons butter
3 cups cooked and chopped chicken
1 cup frozen cubed potatoes (hashbrowns)
3 cups chicken broth
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon salt
pepper
Splash of half and half
Store bought or homemade pie crust
Directions:
Add butter to a skillet and cook the onions, carrots, and celery until softened.
Add the flour to the pan and stir to coat, cook about 1 minute. Add the broth to the pan and let everything combine well. Turn the heat to medium so it’s just barely bubbling.
Add the thyme, oregano, salt and pepper, and splash of half and half.
Add the cooked chicken and frozen potatoes to the pan. Stir to combine and turn the heat off.
At this point, I would divide the filling and freeze half. Add the other half to a pie pan and cover with a top crust. Homemade or store bought.
Bake at 350 degrees for 50-60 minutes or until the crust is golden brown.
