The best part of eating out for Mexican food is the cabbage salsa! This recipe is the perfect substitute.
Ingredients:
1 medium head of green cabbage, shredded
6 Roma tomatoes, diced
1 red onion, diced
1/2 bunch cilantro, chopped
1/2 cup canned jalapenos, diced*
1 tablespoon garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
2 limes, juiced
Directions:
Prep all the ingredients, as shown above. Mix in a large bowl and refrigerate for several hours or over night. It gets better the longer it has to sit.
*If jalapenos are too spicy for you, sub in diced green chilies for half or all of the jalapenos. This gives the salsa a much milder flavor.
