Air Fryer Chicken Parmesan

This is a recipe I make a few times a month, my kids love the crispy chicken and I love the pasta. You can make this in the oven as well, it just won't be as quick!





Ingredients:

  • 4-6 thin sliced chicken breasts

  • 2 eggs

  • 1/2 cup flour, seasoned with salt and pepper

  • 2-2 1/2 cups Italian bread crumbs

  • Olive oil (see below for amount)

  • Jar of good marinara sauce

  • Pasta of choice, cooked

  • 1 cup shredded mozzarella cheese

Directions:

  1. Start by making a dredging station. The order is: flour, egg, breadcrumb (each in their own shallow bowl/plate. Have a sheet pan ready to place your coated chicken on.

  2. In the bread crumbs, add 2-3 tablespoons of olive oil and use a fork to mix it into the crumbs. It should look like wet sand.

  3. Starting with a piece of chicken, coat it in the flour and then dip into the egg. Lastly, coat with the breadcrumb/olive oil mixture. Place on the sheet pan and finish coating all the chicken breasts.

  4. Preheat the air fryer to 360 degrees, cook the chicken for 12-15 minutes flipping half way through. During the last minute or so, spoon marinara on each chicken breast and sprinkle with cheese.

  5. Serve with cooked pasta and the extra marinara sauce!

**If cooking in the oven instead of an air fryer, I would bake at 425 degrees for 20-25 minutes.
