This is a recipe I make a few times a month, my kids love the crispy chicken and I love the pasta. You can make this in the oven as well, it just won't be as quick!
Ingredients:
4-6 thin sliced chicken breasts
2 eggs
1/2 cup flour, seasoned with salt and pepper
2-2 1/2 cups Italian bread crumbs
Olive oil (see below for amount)
Jar of good marinara sauce
Pasta of choice, cooked
1 cup shredded mozzarella cheese
Directions:
Start by making a dredging station. The order is: flour, egg, breadcrumb (each in their own shallow bowl/plate. Have a sheet pan ready to place your coated chicken on.
In the bread crumbs, add 2-3 tablespoons of olive oil and use a fork to mix it into the crumbs. It should look like wet sand.
Starting with a piece of chicken, coat it in the flour and then dip into the egg. Lastly, coat with the breadcrumb/olive oil mixture. Place on the sheet pan and finish coating all the chicken breasts.
Preheat the air fryer to 360 degrees, cook the chicken for 12-15 minutes flipping half way through. During the last minute or so, spoon marinara on each chicken breast and sprinkle with cheese.
Serve with cooked pasta and the extra marinara sauce!
**If cooking in the oven instead of an air fryer, I would bake at 425 degrees for 20-25 minutes.
